I use PSP 8 -- I had my base, duplicated it, made the top layer black and white, and erased the bits that I wanted to be in color. You can also use the Saturation tool.

Oh, 21 has gorgeous cropping. I really really like how that makes the icon look, kinda haunting in a way. Also love the cropping in 17, but I especially love the soft coloring in that one. The background and the text, how you did that is stunning. I love that effect.
2, 3 and 4 are my favs from the Edward Scissorhands. I love the overall look to those icons and the dark coloring. You really captured the moments in those especially. Great work :D
